Mahi Mahi with Mango Salsa

This is a wonderful recipe for filets of Mahi Mahi. It was given to me by Mike Becker, an avid sportsman and chef, who passed away in October of 2017.

Mahi Mahi with Mango Salsa

Ingredients

For the Salsa:

cups chopped mangos

1

cup fresh pineapple - chopped

1

jalapeno pepper - seeded and finely chopped

1/3

cup red onion - diced

1/3

cup diced red bell pepper

1/4

cup chopped cilantro

2

tablespoons fresh lime juice

4

teaspoons safflower oil

For the Fish:

4-6

ounces fillets mahi mahi

1/4

cup pineapple juice

1

tablespoon safflower oil

pinch salt

Instructions

1. Preparing the Salsa

Mix the first eight ingredients in medium bowl. Season with salt and pepper. (Can be made 6 hours ahead. Cover and chill.)

2. Marinating the Fish

Mix the remaining tablespoon of oil with the pineapple juice, season with salt. Pour marinade across the Mahi Mahi in a shallow glass dish. Marinate for 2 hours, turning occasionally.

3. Cook and Serve

Heat grill to medium-hot. Sear the Mahi Mahi on both sides and cook till it is opaque in the center, careful not to overcook it. Place the fish on a serving plate and cover with salsa and serve.
